Six Soups to Make Year-Round

I know making soup in the summer can be a divisive topic, but in my house, soup season is every season. If you’re just starting to experiment with keeping soup on the menu no matter the weather, I gathered up some of my favourite summer-friendly soups for you to try.

These are the soups I come back to when I want something comforting but not too heavy. Some are quick and brothy, some are creamy but still bright, and they all hit the spot in that cozy-but-fresh way.

1. Creamy Corn Chowder

The ultimate summer soup. If you’re just starting to dip your toe into the world of warm-weather soups, corn chowder is the best place to start. This one takes peak-season sweet corn and turns it into something way beyond basic grilled corn-on-the-cob.

It’s broth-based so it stays light, but blending a portion gives you that creamy, cozy texture. It’s sweet, savoury, and exactly what I crave in the summer.

2. Italian Wedding Soup

Italian wedding soup is such a classic to me, no matter the weather. Tiny meatballs, tender pearl couscous, soft veggies, and plenty of greens all come together in a light but flavourful broth that has so much going on in every bite.

It’s hearty enough to feel satisfying, but still brothy and fresh enough for summer. The bite-sized meatballs make it cozy, the greens keep it bright, and the toasted pearl couscous adds the best chewy, nutty texture.

3. Golden Garlic Soup

This golden garlic soup is inspired by česnečka, a classic Czech garlic soup that’s said to cure just about anything—a hangover, a cold, or simply a long day. I first tried it at a cozy pub in Prague a few years ago and immediately fell in love.

For this version, I added turmeric to my original recipe, which gives the soup its beautiful golden colour and makes it feel even more soothing. It’s perfect for a rainy summer night, a dreaded summer cold, or anytime you want something simple and cozy.

4. Short Rib Noodle Soup

This is my favourite way to enjoy short ribs in the summer. Instead of turning them into a heavy braised roast, they simmer into a rich, savoury broth that still feels light enough to eat year-round.

The short ribs make the soup deeply flavourful, but the noodles, herbs, scallions, lime, chili oil, and crunchy fresh toppings keep everything bright and balanced. It’s cozy without being too heavy, and such a good way to get that slow-cooked short rib flavour in a lighter, brothy bowl.

5. Creamy Hatch Chile Chicken & Rice Soup

A hearty chicken and rice soup might not sound like the most obvious summer recipe, but this one makes perfect sense when you check the calendar. August and September are peak Hatch chile harvest months, so late summer is actually the best time to make it.

Think roasted chiles, golden seared chicken, toasted rice, and a bright hit of lime. And don’t worry if you find this recipe outside of Hatch chile season—poblanos, Anaheims, or even canned green chiles all work as easy swaps.

6. 20 Minute Wonton Soup

This is the soup I make when I want something fast, comforting, and super low effort. Frozen wontons do most of the work, and the gingery, garlicky broth tastes like it simmered all day.

Top it with chili oil, extra green onions, or whatever fresh herbs you have around, and it’s the perfect spicy, cozy, and easy soup.
