Lemon Garlic Air Fryer Chicken Thighs
These Lemon Garlic Air Fryer Chicken Thighs are such an easy dinner to have in your back pocket for busy weeknights. The chicken marinates in lemon, garlic, oregano, and a little tomato paste, then cooks in the air fryer until golden on the outside and perfectly juicy in the middle. And since everything comes together without turning on the oven, it’s especially nice for warmer nights.
I served the chicken with creamy horseradish mashed potatoes, sautéed asparagus, and a fresh herby yogurt sauce, but you can really make this dinner your own. Pair the chicken with any kind of potatoes you like and whatever vegetable sounds good or happens to be in the fridge.
It’s simple enough for a weeknight, but the bright lemony chicken and fresh herb sauce keep it from feeling like just another chicken dinner.

Prep for Lemon Garlic Air Fryer Chicken Thighs:
- Zest and juice the lemon.
- Whisk together the chicken marinade and add the chicken thighs. I used 2 thighs, but if you’re making 4, you may want to double the marinade.
- Peel and chop the potatoes, placing them right into a pot of cold, salted water.
- Rinse the asparagus and trim off any dry ends.
- Rinse and roughly chop the fresh herbs. They don’t have to be perfect since they’ll be blended into the yogurt sauce anyway.
How to Make Lemon Garlic Air Fryer Chicken Thighs:
Step One: Marinate the Chicken
Pat the chicken thighs dry. In a large bowl, whisk together the tomato paste, olive oil, lemon zest and juice, celery salt, oregano, and grated garlic. Add the chicken and toss until well coated. Let marinate for at least 30 minutes.

Step Two: Start the Potatoes
While the chicken marinates, peel the potatoes and cut them into small chunks. Add to a pot of cold, salted water and bring to a boil. Cook for about 15-20 minutes, or until a knife slides through easily. Drain, then return the potatoes to the hot pot for 1-2 minutes to let any excess steam escape. Cover and set aside to keep warm.
Step Three: Make the Yogurt Herb Sauce
While the potatoes cook, add the Greek yogurt, fresh herbs, lemon juice, salt, and black pepper to a blender or food processor. Blend until smooth, then refrigerate until ready to serve.
Step Four: Cook the Chicken
Preheat the air fryer to 400°F, if needed. Remove the chicken thighs from the marinade and arrange them in the air fryer basket in a single layer. Air fry for 15-17 minutes, until golden on top and the internal temperature has reached 165°F.

Step Five: Make the Mashed Potatoes
While the chicken cooks, warm the half-and-half, butter, and cream cheese in a small saucepan over low heat until the butter and cream cheese have melted and the mixture is smooth. Pass the warm potatoes through a ricer, then gently fold in the warm dairy mixture. Stir in the horseradish and salt, being careful not to overmix. You can add an extra splash of half-and-half. if needed, to loosen them.
Step Six: Cook the Asparagus
Heat the olive oil in a small sauté pan over medium heat. Add the asparagus and cook for about 3-4 minutes, tossing occasionally, until vibrant green and crisp-tender. Finish with a squeeze of lemon juice and a pinch of flaky salt.

Step Seven: Serve
Spoon the mashed potatoes onto each plate, then top with the chicken thighs and asparagus. Serve the yogurt herb sauce spooned over the chicken, or on the side in a small dish for dipping.

Substitutions for Lemon Garlic Air Fryer Chicken Thighs:
Chicken thighs: This would also work with chicken breasts. Choose a thinner cut so that they reach 165°F without getting dried out.
Chicken marinade: Feel free to customize this to your flavour preferences, just be sure it gets to sit for 30 minutes.
Russet potatoes: Yukon golds work too for a mash thats more creamy than fluffy.
Half-and-half: Whole milk or heavy cream can be used instead. If using heavy cream, you may want to add a little less at first and adjust as needed.
Horseradish: Dijon mustard is a good option if you want a little tang without the sharper horseradish flavour. You can also simply leave it out.
Asparagus: Broccolini or green beans, prepared the same way, would also work well as the veggie side.
Greek yogurt: Swap for sour cream if you prefer.
Fresh herbs: I used cilantro and chives, but parsley, dill, basil, mint, or a combination of whatever fresh herbs you enjoy will work.

How to Store any Leftovers:
Fridge: Store the chicken, mashed potatoes, and asparagus in separate airtight containers in the fridge for up to 3 days.
Reheat: Reheat the chicken and asparagus in the air fryer until warmed through. You can warm the mashed potatoes in the microwave or in a small pan. Add a little extra cream or butter to bring them back together.
