Cobb Salad
LOVE a good cobb but I do like making some minor tweaks. This one has a lovely shallot vinaigrette!

Cook Time 20 minutes mins
Serves 6
Salad Base:
- 1 head of butter lettuce
- 8-10 strips of bacon
- 2-3 boiled eggs
- 1 cup sliced cherry tomatoes
- 1 avocado
- 2 cups cubed ciabatta bread
- 1/2 cup crumbled feta
Shallot Vinaigrette:
- 3 tbsp ACV
- 1/4 cup olive oil
- 1 small shallot
- 1 tbsp dijon mustard
- 1 tbsp agave or honey
- big pinch salt
Bacon goes in the oven at 400 degrees for about 15-20 min (depending on how crispy you like).
Utilize that leftover bacon fat and mix in the ciabatta cubes. Bake at 400 for about 10-12 min or until desired crispiness.
