Sheet Pan Beef Tacos with Avocado Lime Crema

Ingredients
  

Taco Ingredients:

  • 1 lb ground beef
  • ½ onion
  • 1 tsp chili powder
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp onion powder
  • ½ tsp celery salt
  • ¼- ½ tsp cayenne depending on how spicy you’d like it
  • ¼ cup tomato paste
  • 1 tsp cilantro stems chopped
  • 6-8 tortillas
  • Olive oil for brushing
  • Cheese grated (I used colby jack but feel free to use whatever you like)

Avocado Lime Crema:

  • 1 avocado
  • 1 lime
  • ¼ cup sour cream or greek yogurt
  • Pinch of salt
  • ¼ cup torn cilantro
  • Optional: jalapeno for a kick

Instructions
 

  • Preheat oven to 400°F.
  • Brown the ground beef with all the seasonings and tomato paste. Set to the side.
  • On a baking sheet lined with parchment paper, place the tortillas and brush on each side with olive oil. Add seasoned ground beef (with a slotted spoon so you don’t transfer over any of the excess oil) to half of the tortilla.
  • Cover with some of the grated cheese, fold the tortilla in half and finish with a bit more of the grated cheese on top of the closed tortilla.
  • Place into the oven for about 15 minutes or until golden and the cheese is bubbly!
  • Meanwhile assemble the avocado lime crema: in a blender or food processor mix avocado, sour cream or greek yogurt, juice of 1 lime, cilantro and a pinch of salt. Option to add some jalapeno for a bit of a kick!
  • Dress the crispy sheet pan beef tacos with lime wedges, more cilantro, and the avocado lime crema on top!
