Chicken Burrito Bowl

Say goodbye to boring meal prep: introducing this super healthy and flavorful spiced chicken burrito bowl that is absolutely PACKED with protein!

Serves 6

Ingredients
  

  • 1-1.5 lbs chicken breast/tenders chopped in cubes
  • 1/2 - 1 tsp cayenne pepper use less if you don’t want it as spicy
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tbsp salt
  • olive oil
  • 2 cups rice quinoa, farro, barley (or any grain you like!)
  • 4 cups water or broth
  • cherry tomatoes chopped
  • 1 can black beans rinsed
  • lettuce chopped finely
  • roasted corn I use a frozen bag from Trader Joe’s - can also use canned corn

Avocado Lime Crema:

  • 1 large or 2 small avocados
  • juice of 2 limes
  • 1/2 cup sour cream or greek yogurt
  • pinch of salt

Instructions
 

  • Cube up the chicken breast and add the spice blend with some olive oil. Stir and let sit for at 10 minutes.
  • Meanwhile, cook quinoa or grain of your choice and set to the side.
  • Sautée the chicken breast over medium heat until cooked through and set to the side.
  • Blend up all of the ingredients for the avocado lime crema (option to store in a squeeze bottle)
  • Prep your vegetables and beans and then assemble everything together!
