Chicken Burrito Bowl
Say goodbye to boring meal prep: introducing this super healthy and flavorful spiced chicken burrito bowl that is absolutely PACKED with protein!

Serves 6
- 1-1.5 lbs chicken breast/tenders chopped in cubes
- 1/2 - 1 tsp cayenne pepper use less if you don’t want it as spicy
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tbsp salt
- olive oil
- 2 cups rice quinoa, farro, barley (or any grain you like!)
- 4 cups water or broth
- cherry tomatoes chopped
- 1 can black beans rinsed
- lettuce chopped finely
- roasted corn I use a frozen bag from Trader Joe’s - can also use canned corn
Avocado Lime Crema:
- 1 large or 2 small avocados
- juice of 2 limes
- 1/2 cup sour cream or greek yogurt
- pinch of salt
Cube up the chicken breast and add the spice blend with some olive oil. Stir and let sit for at 10 minutes.
Meanwhile, cook quinoa or grain of your choice and set to the side.
Sautée the chicken breast over medium heat until cooked through and set to the side.
Blend up all of the ingredients for the avocado lime crema (option to store in a squeeze bottle)
Prep your vegetables and beans and then assemble everything together!
