Because of its size, honeynut squash cooks a bit faster than its larger butternut cousin, making it a great option for quick meals.

Prepping squash can seem a bit intimidating, but with a few simple steps, you’ll have it ready in no time:

  1. Peeling: Use a sharp vegetable peeler to remove the tough outer skin. For honeynut squash, you might find that the skin is tender enough to leave on, but for butternut squash, it’s best to peel it.

Slice off the top of a head of garlic and place it on the baking sheet, drizzling it with olive oil. Roast for about 30 minutes, or until the squash is tender and slightly golden.

One Pot Butternut Orzo

A quick and easy comfort food dish that the whole family will love...

Serves 5 people

Ingredients
  

  • 1 butternut squash or 2 small honeynut squash
  • 1 head of garlic
  • Olive oil
  • Salt pepper, garlic powder, onion powder
  • 1 lb orzo
  • 1 cup + extra broth
  • Squeeze of lemon juice
  • 1 cup parmesan grated
  • Basil

Instructions
 

  • Preheat the oven to 400 degrees.
  • Prep and cut the squash into small cubes and place on a baking sheet. Season with olive oil, salt, pepper, onion and garlic powder. Mix to combine. Slice off the very top of the garlic head and add to the baking sheet. Cover with olive oil.
  • Roast for about 30 minutes, or until slightly golden. Blend up the roasted butternut squash and garlic with about ½-1 cup of broth (I like using beef broth but you could use vegetable or chicken as well). Blend until smooth.
  • In a pot, boil some water, add salt and then 1 lb of orzo. Cook until desired tenderness and strain, reserving some of the pasta water.
  • Pour the orzo back into the pot and add in the blended squash/garlic, some of the pasta water, and a bit more broth if needed to reach a smooth consistency.
  • Finish with a squeeze of lemon (to your liking), grated parmesan, and adjust the seasoning. Top with basil.
