Step Three:

Meanwhile, shallow fry some sliced shallot in oil until golden and crispy. Set to the side on some paper towel and season with salt immediately. These will be used to garnish the jacket potatoes at the end.

Step Four:

Combine the sour cream with chopped herbs and also set to the side to use when plating everything up.

Step Five:

Once the potatoes are fully cooked, let cool slightly and then make a lengthwise cut down the middle of the potato (stop about ¾ of the way down so you don’t cut through). Then make another lengthwise cut perpendicular to the first one (making a cross), and again don’t cut through all the way. Gently press on the ends of the potato to open it up.

Step Six:

Top immediately with butter, and then add on the herbed sour cream, the slices of smoked salmon, the crispy shallots, and more fresh dill/chives and black pepper. Enjoy!

How to Store:

To store any leftovers, let the potatoes cool completely before placing them in an airtight container. They can be refrigerated for up to 3 days. When ready to enjoy again, reheat in the oven at 350°F until warmed through. Avoid using the microwave to maintain the crispy texture of the potato skins.

Substitutions:

    • Potatoes: If you don’t have russet or Yukon gold potatoes, any baking potato will work. Adjust cooking time as needed.
    • Herbs: Feel free to substitute fresh dill and chives with parsley, cilantro, or even green onions for a different twist.
    • Sour Cream: Greek yogurt or crème fraîche can be used as a tangy alternative to sour cream.
    • Smoked Salmon: For a different flavour, try using smoked trout.

Tips & Tricks:

  • Perfect Crispiness: Rubbing the potatoes with olive oil and seasoning generously with salt ensures a crispy and flavourful skin.
  • Even Cooking: Remember to flip the potatoes halfway through cooking to ensure they bake evenly.
  • Garnish Right Before Serving: Add the smoked salmon, herbed sour cream, and crispy shallots just before serving to keep everything fresh and vibrant.
  • Use Quality Ingredients: Fresh herbs and high-quality smoked salmon make a significant difference in flavour.

How To Make This Without an Air Fryer:

No air fryer? No problem! You can achieve the same crispy texture by baking the potatoes in a conventional oven. Here’s how:

    1. Preheat your oven to 425°F (220°C).
    2. Follow the same preparation steps: wash, dry, and prick the potatoes, then rub with olive oil and season with salt and pepper.
    3. Place the potatoes directly on the oven rack or on a baking sheet lined with foil.
    4. Bake for 45-60 minutes, flipping halfway through, until the skins are crispy and the insides are tender.
    5. Continue with the recipe by adding your toppings and enjoying your Nordic Jacket Potato!
